Its been so hot lately. I can’t eat much in a sitting. I’ve basically turned into a chronic snacker. So for lunch I wanted a light, simple, no frills vegetable dish I could enjoy.
I simply used a bit of olive oil in a frying pan with some zucchini, yellow summer squash (I call it yellow zucchini because it looks exactly like that), some vidalia onion, and sweet bell peppers. Then added some pink Himalayan salt and pepper to taste. Simply cook until your onions are translucent (and other vegetables are soft). This is great both warm or cold, so you can easily make this ahead to pack in your lunchbox!
