While I didn’t make all of our food gluten free all of the time, I have been eating completely paleo as a temporary measure with my daughter to see if it had any effect on her GI issues. While she seems to be doing better, I just learned that she needs to be eating gluten for 6 weeks in order to be tested for Celiac, which is something I am hoping to finally get someone to test for. This means for the next 6 weeks I will not be making paleo meals. I am hoping to still make one freezable recipie each week to have for after all the test are complete. It is my intention to share these recipies in the next few weeks. I am also continuing to make soy free, legume free, dairy free meals during this time. So I may post some of those as well!
